Addition of chemicals to the food results in the decreased growth of food spoiling organisms. Chemical preservation is one of the common methods of food storage . Salting, sugaring, and pickling are the most widely used methods. In addition to these, there are many more preservatives which retain the quality and flavour without having any harmful effect on the consumer. Salting is done for vegetables, fruits, meat etc. Sugaring, another food storage method is done for apples peaches, pears, plums, apricots etc. Sometimes jams and syrups are also made out of these fruits to which mostly benzoate is added as a preservative. Certain organic acids and esters are also added to food to increase the shelf life which includes sorbates, benzoates, acetates and addition of alcohols like ethanol. When these chemicals are added to the food, there will be a alteration in the pH level of the food which in turn will have an adverse effect on the microbial growth. Sometimes chemical preservation will be combined with low temperature preservation method to improve the shelf life of certain foods. Perishable foods like milk are processed into cheese, butter, curd, yoghurt etc so that they can be stored for a longer period of time.
